1 8 oz. package cream cheese
1/3 c. sugar
1 egg
6 oz. chocolate chips
Cake Mixture...
3 c. flour
2 c. sugar
2 tsp. salt
2 c. water
2 Tbs. vinegar
1/2 c. cocoa
2 tsp. baking soda
2 tsp. vanilla
2/3 c. oil
INSTRUCTIONS
Oven: 350°
1. Filling. Cream together cream cheese and sugar. Add egg. Beat well and then stir in chocolate chips. Set aside.
2. Cake mixture.
In a separate bowl, combine dry ingredients before adding water,
vinegar, oil, and vanilla. Beat cake mixture well until smooth. Spray
muffin pans with non-stick cooking spray or insert cupcake wrappers.
3. Fill each cup 2/3 full of cake mixture. Drop 1 tsp. cream cheese filling into the center of each cupcake.
4. Bake for 30-35 minutes. Cool completely and serve.
